
My family has a driveway lined with 10 year old olive trees and 6 months ago we decided to harvest. We were a bit nervous with how they might turn out, having never attempted bottling and curing olives before! They first needed soaking, then rinsing every night with water for a week, and finally left to sit for 6 months in a brine of salty water topped with oil.
We have just opened a bottle and to our AMAZEMENT they are DELICIOUS!! I’ve wrapped up a few for Christmas…which is in 3 days….3 DAYS! I can’t believe how quickly it’s come around! Look out for more posts coming to the blog soon…xxx
